Texas Style BBQ with a Northwest Flair
Barbecue is a style of cooking. The old saying is "low and slow." When barbecue cooking started, it was cooking the tougher cuts of meat because they were cheap. The cook would use whatever source of wood that was nearby, which in the south was hickory or mesquite. Cooking the meat at a low temperature for long periods of time made it more tender. At Mc G's, we believe in smoked meat that is cooked at low temperatures for long periods of time. But unlike what you would find in Texas, we use Alder for all our meats, which gives our meat a distinctive northwest flair.
Our Story
Mc G's BBQ got it's start over 16 years ago on the Umpqua River. We started with a Big Chief electric smoker to make what we called "salmon candy." From there we branched out to brisket. After about 5 years of trial and error, we stumbled across our famous dry rub which we still use today. Now, two personal smokers and four bbq trailers later, we are ready to open to the public. We have volunteered for the past 10 years and cooked for groups as small as 20, and as large as 600. We are looking forward to sharing the Mc G's experience with you!
